Flour Tortillas

  • A vegan Sonoran style flour tortilla. Made with unbleached flour, avocado oil, sea salt and water.

  • Yoli Sonoran style flour tortillas are made with just four ingredients: unbleached flour, locally sourced pork leaf fat, sea salt and water.

Corn Tortillas

  • White corn is mild in flavor, and it yields a very soft tortilla. It pairs well with everything!

  • Yellow corn is mild in flavor, and it yields a stronger tortilla. Ideal for tacos, chilaquiles, tostadas or chips.

  • Red corn has a sweetness at the end, and it yields a beautiful burgundy color tortilla. It goes great with steak tacos and vegetables.

  • Blue corn has an earthy flavor. It pairs well with Oaxacan cheese, sautéed zucchini or mushrooms.

Totopos

  • A hint of sea salt lets the flavor of stone ground corn shine in these totopos. They’re a classic for a reason.

  • Corn tortilla totopos dusted with our house-made Macha Morita seasoning. Freshly ground morita peppers deliver a smoky taste with a touch of spice.

  • Made with non-GMO heirloom corn, these totopos are seasoned with ground hibiscus blossoms and chiles. They’re sweet, sour and have a hint of spice without being spicy.

Salsas

  • A taqueria classic green salsa. Made with peppers, tomatillos and avocado oil.

  • The perfect pairing for tacos and totopos. Taco Stand Rojo is a smoky blend of peppers, aromatics and charred tomatoes that finishes with a bit of heat.

  • A traditional Salsa Macha made with chile morita, spices, sesame seeds and peanuts.

  • Yoli’s take on Salsa Macha, made with ground chiles, peanuts and black garlic.

Ancient Methods

Yoli Tortilleria prides itself in producing the best quality stone ground corn tortillas. Our tortillas are crafted utilizing the ancient method of nixtamalization, where the corn is cooked with food grade lime.

After rinsing, the cooked corn is stone ground using hand-carved volcanic stones resulting in a soft and finely ground masa.

This masa is then run through our tortilla oven and the result is a quality tortilla with superb flavors.

Yoli Tortilleria was founded in 2017 by Marissa and Mark Gencarelli to recreate the authentic tortillas Marissa remembered from her childhood in Sonora, Mexico. Driven by a commitment to quality and tradition, Yoli produces stone-ground heirloom corn tortillas and Sonoran-style flour tortillas, among other products, while using sustainable practices and quality ingredients.

Yoli's name, derived from the Aztec word for "to live," embodies their mission to craft hand-made, authentic foods inspired by centuries of Mesoamerican tradition and personal family heritage. By integrating ancient processes with local, seasonal ingredients, Yoli Tortilleria strives to honor and celebrate Mexico’s culinary heritage through our products.
